What we eat and how we eat reflects time and place of human existence. What food has historically been consumed by the human population is a very relevant question, both for health and environment. Millet, a food source currently being promoted as healthy food was first domesticated in Asia and Africa over 10,000 years ago, is one of the oldest dry crops. Renowned for its drought resistance, millet was a staple in ancient China, India, and Africa, later spreading to Europe. Its popularity waned with the rise of wheat and rice but is now increasing due to its nutritional value and resilience, highlighted by 2023 being named the International Year of Millets.
