Strength, health, longevity, and vital breath are dependent on the
power of digestion and metabolism. When supplied with fuel in
the form of food and drinks, this power of digestion is sustained; it
dwindles when deprived of it. – Caraka Saṁhitā

Śarad r̥tu (the Autumn season) is full of gold, red leaves against blue skies,
and a bountiful harvest of vegetables from the gourd (Cucurbitaceae) family.
It is naturally a time to feel the depth and breadth of our relationship with
the earth, and the subsequent gratitude to the abundance that it provides.
Cucurbitaceae vegetables include squashes, pumpkin, summer squash,
chayote, bottle gourd, and zucchini. This recipe showcases the delicious
and festive kuṣmāṇḍa (the orange fleshed variety of pumpkin, differing
from winter melon).
